Think of podcasts, an audio format for when you are on the go or busy. Or Reels for entertainment, if you want to amuse yourself briefly. As it were, short adrenaline shots. For longer videos, which you can find on YouTube or IGTV, you need more time and you watch these when you want to delve deeper into something. We watch Stories just like the 'old' timeline, in between. We watch them because they are made by people we know or find interesting and we can experience what they are doing.

Guides have a completely different function. A guide is a collection of Instagram posts from others or your own account. Often with one topic, where you can add additional text. It seems like this feature was developed to make content from the feed more durable, and more valuable because another account highlights it.
